Capra mista Sabauda: a semi-matured cheese with a delicate and fragrant flavour, produced with pasteurised milk by cheesemakers in north-eastern Piedmont.
It is excellent paired with Piedmontese red wines, but also highly recommended with pale ales, orange marmalade, pumpkin and ginger jam, fresh fruit, walnut or grape bread.
