A new Novara Blue is named after San Carlo, whose famous colossus can be visited in Arona, our town.
This mature cheese is made from pasteurised cow's milk from the province of Novara; it is then processed in coffee and left to mature for at least another 90 days after arrival in our cellars.
Erborinato San Carlone caffè in crosta is a table cheese that recalls the great blue Piedmontese tradition. It has an intense and slightly piquant flavour, characteristic of blue-veined cheeses, with light notes of stable and marked penicillo, combined with the unmistakable aroma of coffee.
Suggested pairings: full-bodied and aged red wines, sweet and liqueur wines, grappa, spicy fruit mostarda, red onion jam, rye bread, polenta.
