Storico Ribelle is produced during the summer months in the alpine pastures: dairy cows (traditionally of the brown alpine breed) and goats (of the Orobica breed indigenous to the Valgerola) are taken to the pastures in June and remain there, weather conditions permitting, until September. The cattle and goats feed exclusively on alpine pasture. The Orobian Pre-Alps have a floral variety that gives the milk superior nutritional properties, making it rich in polyunsaturated fatty acids and an essential omega-3 fatty acid. The biodiversity of the mountain environment and its scents and aromas give unique organoleptic characteristics to each wheel of Storico Ribelle produced in the twelve mountain pastures of the Consorzio di Salvaguardia.
