Asiago cheese originated in the area of the Asiago plateau and then spread to the plains of the neighbouring provinces. Asiago DOP vecchio in particular is a ripened version of this cow's milk cheese with a hard straw-yellow paste and fine eye formation, appreciated by those who love intense, dry and piquant flavours.

We recommend enjoying it with full-bodied, aged red wines, chestnut honey, spicy fruit mostarda and rye bread.
