A semi-matured pasteurised cow's milk cheese produced on organic farms in the Swiss Alps, Bundner Bergkase is characterised by the scent of fresh grass on which the cows feed at high altitudes.
Its flavour is intense, sweet, so it is recommended in combination with red wines, aromatic honey, pumpkin mustard, fresh fruit (e.g. Passacrassana pear), black rye bread, polenta.
