Castelmagno DOP d'Alpeggio is only produced in a restricted area of Val Grana, coinciding with the three municipalities of Castelmagno, Pradleves and Monterosso Grana. The DOC dates back to 1982, the PDO recognition was awarded in 1996: attempts at imitation in the surrounding villages and valleys are countless, however, only with proper refinement does this great cheese fully reveal its characteristics.
Castelmagno DOP d'Alpeggio is a mature cheese made from raw cow's milk. Its paste is straw-coloured, compact and grainy, with mottled marbling. Its strong flavour with slight notes of stables and strong hints of penicillium goes well with full-bodied, aged red wines, sweet and fortified wines, white watermelon mostarda, blueberry jam, rye bread and polenta.
