In this assortment we offer one raw goat's milk cheese (about 400 g), one pasteurised goat's milk cheese (Nostrale di capra 300 g), one raw whole cow's milk cheese (Toma alpeggio 300 g), two pasteurised cow's milk cheeses (Erborinato San Carlone allo zafferano 300 g circa, Cacio di Mucca affumicato 350 g circa) and finally one buffalo milk cheese (Robiola di Bufala 250 g circa). Two 40 g jars of spicy Vignale jams complete the tasting.


Capra Lago d'Orta ash is produced by a small cheesemaker with milk milked from free-range grazing goats; like Nostrale di capra, it has a compact paste and an intense flavour. On the other hand, the Toma alpeggio is a cheese generally from the Ossola Valley that gives notes of alpine herbs and barn grass, the Erborinato San Carlone with saffron is a blue Novarese table cheese, while the Cacio di Mucca affumicato is the soft and sweet pasta filata proposal of this tasting. We close with the creaminess of Robiola di Bufala produced in the Bergamo area.
