Brescianella of the dried type is matured for a few days in aqua-vitae and then 'dried' in wheat bran: the perfect combination of a cheese with a delicate flavour and the biting taste of alcohol. It is a pasteurised cow's milk cheese with a pale straw-coloured paste, very soft and melting.
Enjoy its strong, persistent flavour while sipping a full-bodied, aged red wine, grappa and brandy; pair it with white watermelon mostarda, Marsala jelly and Ferrara bread.
