Did you know that 'home' in Ossola means the valley floor cheese factory, as opposed to the high mountain pasture? Guffanti pays particular attention to the selection of producers with high quality standards: these are often the same alpigiani who, during the months of the year when they remain at the bottom of the valley, dedicate themselves to the 'home' tome with the same skill demonstrated in the mountain pasture, even if the raw material (i.e. the milk) is different, lacking the flavours transmitted by the high mountain flora.


Important is the production of Valle Antigorio, one of the Ossola valleys where traditional raw milk processing has been resumed. The Antigorio Reserve Cheese, matured for a minimum of one year, is a cow's milk product with an intense flavour, with notes of grass or hay and stables.

Suggested pairings: full-bodied red wines, aromatic honey, fresh fruit (e.g. Passacrassana pear, cherries, etc.), black rye bread, polenta. The rind is not edible, although it is not treated with additives.
