Its name in dialect means 'mountain cheese': it is produced in 22 municipalities of the Alta Val Brembana, on the border with Valtellina. We are talking about Formai de Mut dell'Alta Val Brembana DOP, presented here in the aged version over 12 months.
This raw-milk alpine cheese has a compact, straw-coloured paste, with dense partridge-eye holes. Its intense and rich flavour, with slight animal and grass notes, is perfect with full-bodied red wines, aromatic honey, fresh fruit (we particularly recommend the Passacrassana pear), spicy pumpkin jam, black rye bread and 'taragna' polenta.
