This PDO spicy Gorgonzola is matured for more than twice as long as the norm, resulting in a richer marbling and a much more intense bouquet of aromas. Prolonged ripening makes the paste more compact and greatly evolves the flavours and aromas due to the penicillo, developing them into an elegant declination.
This matured cow's milk cheese has a very strong, slightly piquant flavour. Recommended for lovers of great cheeses in combination with full-bodied and aged red wines, sweet and liqueur wines, rum, spicy fruit mostarda, red onion jam, wine jelly with Vin Santo or Marsala.
