It is a Sardinian sheep's milk cheese, cooked, coagulated with calf rennet. Its intense, piquant flavour highlights the scent of the Mediterranean maquis pastures on which the grazing sheep feed.
It was created with the intention of utilising all the substances present in milk, which are essential for our organism, also improving its nutritional aspect; during its long maturing process, a strong proteolysis and lipolysis occurs, making the product easy for our organism to assimilate and easier to digest. Moreover, due to its low salt content and high calcium lactate content, it is recommended in any diet, to hypertensives and also to strengthen the bone system.
