La Bomba: a small raw cow's milk cheese from Cuneo, produced by hand, one by one, by hanging the moulds in linen cloths so as to create a small depression in the upper dish.
This is a semi-matured cheese to which organic linden honey is added in the upper dish after dry salting and initial maturing: the honey, maturing with the cheese, releases its perfume and taste, leaving pleasant nuances of flavour on the palate.
We recommend enjoying it in combination with full-bodied red wines, spicy mustards and black bread.
