From Sardinia, a novelty in the world of sheep's milk: here is Cedrino, a peppered sheep's milk cheese that takes its name from a river that flows through its production area, located in the province of Nuoro.
Coarse-grained black pepper is added to the curd to be compacted with the mixture, thus adding a touch of flavour to the sweetness of the sheep's milk in addition to the savouriness due to the ripening process.
Recommended pairings: full-bodied red wines, rum, strawberry tree honey, wholemeal bread.
