In the area around the Piedmontese municipality of Roccaverano, in the Langhe, a fresh soft cheese is produced from 100% goat's milk, raw and skimmed: Roccaverano DOP.
It exhibits a soft but rather consistent ivory paste. Its slightly acidic flavour is exalted in combination with fruity white wines, light beers, orange marmalade, pumpkin and ginger jam, fresh fruit, nut or grape bread.
