Our Shropshire Blue cheeses are made by the same manufacturer as Stilton following the same special recipe: hand-processed curd, the use of animal rennet to give the cheese a more harmonious flavour, and the introduction of blueing at a later stage of ripening for a better balance between paste and blue. In fact, you should know that the only difference between the Shropshire recipe and the Stilton recipe is the addition of the natural colouring agent annatto, which gives the paste its orange colour.

The average ripening time for this cow's milk cheese is around 3-4 months. To the sweet milk flavour with hints of saffron is added a penicillic note at the end.
