The technique and processing of mature Stracchino di capra stagionato are similar to those of Taleggio, which in ancient times was also called 'Stracchino' like other raw paste cheeses from Lombardy, mainly produced after coming down from the mountain pasture (when the cattle was 'stracco', i.e. tired); this production exclusively uses raw goat's milk, which gives it distinctive characteristics.

Its flavour is very intense, penetrating, with a hint of acidity and rich hirschine notes: appreciate it in combination with full-bodied and aged red wines, aromatic honey, fresh fruit (Passacrassana pear, cherries...), black rye bread, polenta.
