Toma del Mergozzolo is a raw cow's milk cheese, semi-matured, typical of the Piedmont region: it originates from the shepherding tradition of Upper Piedmont as a simple 'Toma' and has evolved into a product refined in form and substance. It benefits from the richness of the lake territory - Lake Orta in particular - to express a rich and deep taste, pronounced but not spicy, suitable for all palates. The name Mergozzolo in particular identifies the place of origin of this cheese, the mountain group of the same name in the Cusian Alps.
