Product Details

This is a goat cheese typical of the Asti Langhe, one of the most important areas in northern Italy for goat farming. To facilitate the ripening of white raw-milk goat's Tuma, it is sometimes used to cross its central part for the longest part with a wooden stick, so that the ripening also begins from the heart as well as from the rind. This produces a fresh cheese with an intense flavor and marked hircine notes.


Suggested pairings? Fruity white wines, pale ales, orange marmalade, green tomato mustard, walnut or grape bread.
